Domein Holset Novo 2022 is a sparkling quality wine from Limburg, crafted according to the traditional method and expressing both precision and elegance. Produced from sustainably grown, hand-harvested grapes from Holset, this Extra Brut cuvée reflects the cool-climate character and innovation of Dutch winemaking.
Made from 85% Souvignier Gris and 15% Johanniter, Novo 2022 charms with a fresh, fruit-driven profile. The grapes are carefully selected and gently whole-bunch pressed at the winery in Lemiers, preserving purity and aromatic finesse. Vinification is thoughtfully layered: 70% fermented and aged in stainless steel, 20% in Burgundian oak, and 10% in ceramic, adding subtle texture and complexity. A full malolactic fermentation and a light dosage of just 3 g/l ensure beautifully balanced acidity and finesse.
After 24 months of bottle aging on the lees, the wine was disgorged in April 2025, resulting in a refined Extra Brut sparkling wine with lively acidity (7.5 g/l) and a soft, elegant finish.

In the glass, Novo 2022 is fresh and vibrant, with aromas of wild peach, citrus fruit, and spring blossom. On the palate, it is lively and elegant, marked by crisp acidity, delicate fruit expression, and a smooth, refreshing finish.

Pairs perfectly with delicate fish dishes such as oysters, scallops or white fish. It also matches beautifully with soft and fresh cheeses, especially young goat’s cheese.

Distributed across Holset, Voerendaal, and Klimmen, they make use of their ideal areas. This means they are not concentrated in a single region. Historically, Limburg is not considered a wine region like Reims or Burgundy, yet it does share some similarities. The vineyards are planted on soils with a loess-rich top layer, containing flint, gravel, and limestone. This composition contributes to the freshness, minerality, and structure of the wines.
